Ultra Crispy Kimchi Pancake
I’ve trained my social media algorithm to serve me exactly what I need, and this Ultra Crispy Kimchi Pancake was a recipe I stumbled upon. I tested it out, and it was also ultra successful🤭 So I’m sharing it with you!
Thanks to @cafemaddy for sharing how she also scoured the Internet for the best kimchi pancake recipe and landed on this one. I tweaked the recipe slightly, but this one’s the best I’ve had thus far too.

Serves: 2 - 3 hungry people
Ingredients
1 cup kimchi - I use this one
1/2 cup plain flour - I used this
1/3 cup corn flour
1/2 cup soju - the one I used (replace with water if you’re cooking without alcohol)
1/2 cup water
1/2 tbsp gochugaru (optional)
Neutral oil for frying - I used avocado oil
Method
In a large bowl, add kimchi, plain flour and corn flour – mix when dry
Then add soju, water and gochugaru
Heat a pan on high – for this, I’d recommend a nonstick pan if you’re a beginner
Add a generous amount of oil
Once the oil is hot, spread a large scoop of batter in the pan. It’ll be good to spread it thin so it has a high probability of crisping well! Some tiny gaps is fine:)
Flip after 3 - 4 minutes, but make sure the oil is in an even layer before your pancake is flipped into it! I only flipped once, but feel free to cook your pancake for as long as you need.

Storage & FAQ
Q1 How do I store leftovers? Place in an airtight container and store in the fridge for up to 2 days. Reheat in an air fryer or pan to regain crispiness.
Q2 Can I add toppings such as shrimps or bell peppers? Definitely! You can even swap out the kimchi for a seafood mix to make Korean seafood pancake:)
Q3 Can I use less oil? You might risk a not so crispy pancake if you do. A good shallow layer of oil not only helps with crisping the pancake well, but also with flipping the entire pancake in one piece.
